Winter Canning: Fresh From The Freezer

In the fall, when harvesting gets overwhelming, my quick fix is to put things in the freezer “for later”. I do this with tomatoes, green beans, peppers, fruit, and more. It takes some of the strain off of me during canning season.

This week I was longing for that canning season again. I got to looking in the freezer, and sure enough there is still produce in there from the fall harvest. Tomatoes and banana peppers caught my eye.

Here was my solution:

Salsa

We had 2 gallon sized freezer bags left of tomatoes in the freezer. Normally I would have peppers, onions and cilantro from the garden too but those are gone. So I went to the store and got everything else I needed to make some homemade salsa.

I like to use this recipe with a few tweaks.

First, throw everything in the food processor and it goes very quickly.

Then, cook this for a little while to kinda meld the flavors together.

I didn’t actually can this recipe in the canner because I knew my family would eat it up so fast it wouldn’t be worth it. In the fall, I can more salsa because I do lots of jars and it will last a little longer.

Banana Peppers

I saw this recipe on Facebook video and thought that would be fun to add to my refrigerator

There aren’t a ton of peppers left, so I won’t be canning these in the canner either. I will keep them in the refrigerator to eat over time.

    Thanks for sharing. I have wanted to just throw my produce in the freezer at the end of harvest. I will try it this year and see how it turns out.
